Lao Cha Tou is formed during the pile fermatation of ripe pu-erh tea. The tender tea leaves and shoots are tightly tied together due to the rich content of pectin. So they can not be dismissed in the screening after the pile fermentation finish. Lao Cha Tou is the essence of ripe pu-erh tea.
