This is the processing of Bai Lin Gong Fu in Bailin Town of Fuding by the tea master Chen. It follows the traditional processing. The tea leaf is withered on the bamboo plate. After rolling, they were put inside the bamboo basket for fermentation, with a cover of cotton cloth on the surface. The humidity and temperature is well controlled in the fermentation house. When the color of tea leaf turn to bright copper red, the tea will give off pleasant fruity flavor, which is the critical point to stop the fermentation. It is the masterpiece of processing of Bai Lin Gong Fu Black Tea.
