Dong Ding Oolong is the oolong tea produced in Taiwan. Dong Ding is a high mountain of Lugu Twon of Nantou County (南投县鹿谷乡). And the tea is named by the mountain. The cultivars to make the Dong Ding Oolong are Qinqxin Oolong (青心乌龙) and Ruanzhi Oolong (软枝乌龙). And it is generally considered that the one made by Qinqxin Oolong (青心乌龙) is higher quality than the Ruanzhi Oolong (软枝乌龙).
The Dong Ding Oolong is classified into three types by fermentation extent , Light fermentation (around 20%), Intermediate fermentation (around 40%) and Heavy fermentation (around 70%). The light one has flowery flavor, close to green tea. The intermediate one gives strong fruity flavor . And the heavy one has matured honey flavor, close to black tea.
The Dong Ding Oolong has complete tea leaf, unlike the Chinese Tie Guan Yin which will remove some of the tea edge during the processing. The tea is tightly rolled into the elegant dragonfly head shape.
