Huang Shan Mao Feng Green Tea is one of the Top Ten Famous Chinese Green Teas. It is produced in the Huangshan Region of Anhui. Since the tea is covered by hair and the bud looks like a mountain peak, it has been named Huang Shan Mao Feng. The Huangshan area is a mountainous place. It has dense forestry and the weather is very cloudy and misty. The soil here contains rich minerals. The good growing surroundings make this tea appear outstanding quality. It has the special earthy & flowery vegetal aroma, which the other Chinese green teas do not have.

It is made by the tea leaves from the cultivar Huangshandayezhong. And the tea leaves are plucked in between the Qing Ming and Guyu season.

After the tea leaves are plucked, the tea will go for slight withering. And at night the tea will be fried in the iron pan. This step is called as Shaqing (Killing), and then it undergoes rolling. Unlike most of the other Chinese green teas, the rolling of Huang Shan Mao Feng is slight. So it keeps the shape of the natural tea leaf. The last handling is baking dry. The baking is divided in into two steps, Mao Huo and Zuo Huo. It is conducted in a big wooden chest and charcoal is burned in the bottom to supply the heat. In the Mao Huo baking, the temperature is high, and the tea inside must be tossed frequently to make sure drying is done evenly. It will stop when around 30% of water remains in the leaf. The tea is kept outside for cooling down and then stirred for a while. It is again sent back for Zuo Huo baking. In this stage, the temperature is lower, and the tea will be baked till final dry.

How to Make the Perfect Cup of This Tea: Check out this step by step process:

  • Step 1: Measure – Measure 1-2 tsp per cup (150ml)
  • Step 2: Heat Water – One should boil or heat water at 70ºC ~ 80ºC (158ºF ~ 176ºF)
  • Step 3: Infuse – To make the best cup of the tea, it is advisable to keep the steeping time of 1 minute.
  • Step 4: Gradually increase steeping time and temperature for subsequent brewing.
