Junshan Yin Zhen is one of the Top Ten famous Chinese teas. It is the only one yellow tea in the Top Ten list. It is produced in the Junshan Island in the Dongting Lake of North Hunan.
We were visiting the Junshan Island in this Spring.
This island is actually a very tiny island among the so many lake islands in China. The area is only 0.96 square km. The tea garden is under the forestry of the island. The area of tea garden is 25 hectares. The island has a lot of old Chinese history stories, which make the island famous. And the monks in the temple of the island has been producing the Junshan Yin Zhen tea since around 1700s.
The Junshan Yin Zhen is Yellow Tea. It differs from green tea in the processing. The critical difference is that after frying the tea will undergo piling for a few hours. In the handling the color of tea will turn to brownish yellow. And the tea taste will be soft mellow and gives kind of cooked sweet corn flavor. This is the most unique character of Yellow Tea-Jun Shan Yin Zhen.
The sea level of Junshan Island is very low, just around 20m. But the soil here is composed by lake sand which is very fertile and good for plant growth. The tea garden in this island have never applied fertilizers, which is not necessary actually. And the tea garden under the forestry has good ecological system to control pest. So there are no pesticides used.
Unlike most of the medium-small tea leaf in Hunan, the tea bud of Junshan tea trees are big and fat. So the tea Jun Shan Yin Zhen has big fat body. The natural fertile land might make this difference.
